1/4 bottle oil 1/2 kg. brinjals 15 green chillies 2" pc. ginger 1 pod garlic 1/2 tsp methi seeds 2 Kashmiri red chiliies haldi 5 big curry leaves 20 gms. rye 50 gms or 100 gms sugar (according to taste) 1/2 pint or 300 ml vinegar
Method: Cut brinjals into 1" pcs, add salt and dry for 24 hours. Mince the ginger & garlic finely. Slit green chillies into fours. GRIND IN VINEGAR: methi seeds, red chillies, rye and haldi. Keep aside. Heat oil, add curry leaves. ginger, garlic, green chillies. Fry well. add masala fry well, then the balance vinegar (as per taste). Add brinjals, sugar & cook thoroughly. Cool & bottle.
